Gomer Got Married

Jim Nabors and his partner of 38 years, Stan Cadwallader, were married in Washington on January 15th. I think it's so cool that these two finally have the chance to be married. Slowly but surely, we're getting there. Congratulations to Jim and Stan!

What's Cookin': Sweet and Sour Chicken

I just tried this dish and it was soooo delicious that I just had to share with y'all. You should try it and let me know how you liked it.


Sweet and Sour Chicken with Roasted Broccoli and Garlic

Chicken:
3-5 chicken breast salt and pepper
1 cup cornstarch
2 eggs, beaten
1/3 cup canola oil

Rinse chicken, trim off fat or extras and then cut into 1 inch cubes. season with salt and pepper. Dip chicken into cornstarch and coat all the way and then into eggs. Heat oil in large skillet. Cook chicken until browned. Place in baking dish. 3 chicken breasts can be in a 9x9 but 5 chicken breasts fits better in a 9x13.

Sauce:
3/4 cups sugar
4 Tablespoons ketchup
1/2 cup white distilled vinegar
1 Tablespoon soy sauce
1 teaspoon garlic salt

Whisk until smooth. Then pour evenly over chicken. Turn chicken so the sauce gets on both sides and then put in the oven at 350 degrees for 15 minutes. turn chicken and then cook for 15 more minutes.

Broccoli:

1 head garlic, peeled (about 16 cloves)
1 cup good olive oil
1 teaspoon crushed red pepper flakes
1 teaspoon kosher salt
4 stalks broccoli, cut into florets (8 cups of florets)
2 tablespoons soy sauce

Put the garlic cloves and oil in a small heavy-bottomed saucepan. Bring to a boil and cook uncovered over low heat for 10 to 15 minutes, until the garlic is browned and tender. Turn off the heat and add the red pepper flakes and 1/2 teaspoon salt. Immediately pour into a heat-proof container to stop the cooking. Allow to cool to room temperature.


For the salad, blanch the broccoli florets in a large pot of boiling salted water for 2 to 3 minutes, until crisp-tender. Drain well and immerse immediately into a large bowl of ice water until the broccoli is cooled. This process stops the cooking and sets the bright green color. Drain well.

In a large bowl, toss the broccoli with 1/2 teaspoon salt, 1/4 cup of the oil used to cook the garlic, the soy sauce, and 8 or more cloves of cooked garlic. Taste for seasonings and serve cold or at room temperature.

Rice:

I used boil in bag brown rice. You use whatever you would like.

Hump Day Hunk: Matt Dallas

When I first saw the previews for Kyle XY, I couldn't take my eyes off Matt Dallas. What a little hottie...and those EYES...so cute! I must confess I lost interest in the show and haven't heard much from Mr. Dallas since then. That was until last week when he came out of the closet and announced his engagement. Good for you, Matt! He is still just as hot as ever and I thought he would make a GREAT Hump Day Hunk!

AJ McCarron and Katherine Webb

Sometimes I wonder how things go so "viral". One flash of the camera and this chick turns into an overnight celebrity?
Sure, Katherine Webb is pretty. You can't deny that. But is she that hot to cause all this ruckus? If you don't know, Katherine is the girlfriend of AJ MCCarron who is the Quarterback for the Alabama Crimson Tide. During the National Championship game on Monday night, the camera flashes to AJ's family in the stand and fixates on Katerine Webb. ESPN announcer, Brent Mussburger, then commented on her looks by saying she was "Beautiful", a "Lovely Lady" and stating “If you’re a youngster in Alabama, start getting the football out and throw it around the backyard with Pop.” Did you see anything wrong with his comments? I don't! So what? Now he's in trouble for the comments and ESPN is issuing an apology. I just have to ask, FOR WHAT? I could say a lot worse about her boyfriend, AJ McCarron cause I think he is HOT! He's got that conservative look but you just know he's a bit of a freak. Or at least that's what I fantasize about :)
Now If I say something like he's hot or I would like to lick his face and other things, will I get in trouble? Oooops....did I just say that out loud? One final thought...
I'm not sure I like these tattoo's AJ but I'll forgive you. Call me!

Hump Day Hunk: Bradley Cooper

I am officially in love with Bradley Cooper all over again thanks to "Silver Linings Playbook". If you have not seen the movie yet, stop what you are doing and go see it NOW.  How many times have you gone to a movie and people actually clap when it's over? Well, they did in the the theater I was in and I was one of those over the moon after seeing it. It's funny, quirky and just plain awesome. And Bradley Cooper....well, he will make you swoon all over again and fall just a little but more in love with him...

Scooby Doodle Martin


I know it's been a long time since I posted last or even been on Blogger for that matter. The last year has been one of the roughest of my life. I've been super busy holding down two jobs and on top of that my precious Scooby was diagnosed with kidney disease which ultimately took his life in September.

I know to some pets are just that. Scooby was a lot more to me. I was blessed to be there the day he entered the world and when he left it. He was my baby! I don't want to get all psycho and introspective on you guys but...I have daddy issues. I never had a dad that cared anything for me and being gay, I knew the chances of me having a child were slim. Scooby was my child and I wanted to be the opposite of my real dad and be the best dad I could be to Scooby. I sure hope I was. I have cried so much the last year during his sickness, and after his death. I'm trying to find that balance of healing and mourning. This blog is just a reminder that he was here and a look back at his life in pictures. I will love you forever, Scooby. Not a day will pass that I don't think of you...
